You need to hit enemies with attacks while riding. Using a bow seems to increase it a lot more quickly than melee attacks. Just ride fast and make sure you get guys. An easy way to "grind" it is to fight larger groups of looters, leave your troops stationary at the start, and ride circles around them while shooting.
